These vegan stuffed peppers were one of my favourite meals!
Prep Time: 5 min Cook Time: 10-15 min
Ingredients:
- 3 peppers
- 1 1/2 cup chopped broccoli
- 1/2 cup chopped red onion
- Ground Round (Vegan beef)
- salt (to taste)
- pepper (to taste)
-1 tsp turmeric
- 1 1/2 cup rice
- 1/2 tbsp coconut oil
Instructions:
1) Put the rice in water until the rice softens.
2) Drain the water and add coconut oil to the rice. (It will help soften the rice)
3) Cut the head of the peppers, red onions and broccoli
4) Place the ground round (vegan beef) on low heat with the chopped red onions and broccoli (4 -5 minutes)
3)Add pepper, salt and turmeric (to taste)
4) Fill 1/3 of the pepper with rice and then add the ground round mix
Your proportions may vary however, these measurements is what I used to create my vegan stuffed peppers!
