Making this vegan soup has been one of my favourite recipes!
Prep Time: 5 min Cook Time: 20 min
Ingredients:
- 4 cups of vegetable broth
- 2 cups of crushed tomatoes
- 1 1/2 cup broccoli (I used a lot because it is my favourite vegetable!)
- 1 cup cauliflower
- 1/2 cup red onions
- 3 stalks of celery
- 1 carrot
- Pepper (to taste)
- Salt (to taste)
- Red chilli pepper (to taste)
Instructions:
1) Pour the vegetable broth into the pot
2) Cut the broccoli and cauliflower. Once the vegetable broth starts to simmer, add the two vegetables into the pot. (Set the heat to medium-high).
3) Chop the celery, red onions and carrots and place them in the pot.
(After a few minutes you will notice that the vegetables will begin to soften.)
4) Add the pepper, salt and red chilli pepper ( to taste).
