Vegan Lentil Soup

This vegan lentil soup was another one of my favourite meals that I created! The moment I made this soup, I had it for the entire week because I developed an obsession over it!


 

Prep Time: 5 min Cook Time: 20 min


Ingredients:


- 3 stalks celery

- 2 carrots

- 1 medium sweet onion

- 3 garlic cloves

- 1 1/2 cup red lentils

- 3 cups vegetable broth

- 1 can coconut milk

- 1 tbsp curry powder

- 1 tsp cumin

- 1 tsp coriander

- 1/2 tsp salt (to taste)

- 1/2 tsp pepper (to taste)


 

Instructions:


1) Cut and put the celery, sweet white onion and mince the garlic cloves into a pot. (Set it on medium heat for about 4-5 minutes. Add some water if it begins to get dry).

2) Add the vegetable broth and set the heat to high.

3) Begin adding the red lentils into the pot and let it simmer for about 10 minutes or until the red lentils begin to get soft.

4) Add the coconut milk and close the lid while setting the heat high ( let it simmer for 4-5 minutes).

5) Add the powders (curry powder, cumin, coriander, salt and pepper into the pot) and stir it well.

6) Turn the heat off and let the soup cool down, as it would allow the lentils to absorb more of the liquids.


 

The lentil soup pairs very well with anything. Rice and lentils were my favourite mix and I recommend it for those of you who have not tried it out yet!
