These vegan cookes turned out delicious! Since I ran out of vanilla extract, I eye balled the coconut oil and mixed it into my cookie dough to have my dough at the right consistency!
Prep Time: 5 min Cook Time: 9-10 min
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup vegan chocolate chips
- 1 tbsp flax seeds
- 1 cup of coconut oil ( 1/2 cup for the cookie dough and see if more is needed depending on the consistency. The cookie dough should be able to be rolled into a ball!)
- 1/2 cup brown sugar
- 1/4 cup cane sugar
Instructions:
1) Mix the dry ingredients (cornstarch, baking soda, all- purpose flour, salt, vegan chocolate chips, flax seeds brown sugar and cane sugar, into one bowl. (stir this pot well).
2) Mix the wet ingredients into another bowl and add it to the dry ingredients after stiring it well for about 3 minutes.
3)Roll the cookie dough into a ball and place it into a bowl. Make sure to take a damp cloth to cover the bowl and leave it in the fridge for 30 minutes.
4) Mix the mixture well and roll the cookie dough into one inch balls. Place them on a cookie sheet and into the oven at 350 for 9-10 minutes.
If your cookie dough appears dry, add some coconut oil into the cookie dough. This will help moisten the cookie dough.
