I made these vegan chicken nuggets quite a few times already and thought I'd share the recipe with you guys!
Oven Time: 25 min Time on Frying Pan: 10-15 min Serves: 8 vegan chicken nuggets
Ingredients:
- 1 block of extra firm tofu (I like using the ones from Costco)
- 1/2 tsp salt
- 2 tbsp nutritional yeast
- 2 tbsp cornstarch
- 1/4 tsp of cracked black pepper
- 1/3 cup non dairy milk (I used coconut milk)
- 1/2 cup bread crumbs
- 1/4 cup flour
- vegetable oil (I used about 1/2 cup for frying)
The proportions I used above was what worked for me the best. You may choose to use a different proportion to some of the things I used for this recipe!
Instructions:
1) Preheat the oven to 350 degrees
2) Press tofu with paper towel or towel to remove some moisture
3) Cut the tofu into small rectangles (1 inch x 2 inches if using the costco tofu and this will result in 4 small rectangles). Nuggets are usually not shaped in a perfect rectangle so I like to cut the vertices of the rectangle in a diagonal.
Since the tofu is quite thick, I usually slice the height in half as well. This gives me 8 small rectangles in total.
4) Grab 3 small bowls and place them in a row side-by-side.
- Add the flour in the first bowl
- In the second bowl, add the non-dairy milk
- In the third bowl, add the breadcrumbs, salt, pepper cornstarch and nutritional
yeast (mix)
5) Dip each piece of tofu into the flour, then the non-dairy milk, and then the breadcrumb mixture. ( Remember to evenly coat both sides of the tofu during this process, flip the tofu over in each bowl before moving onto the next bowl!)
6) Add about 1/2 cup of vegetable oil onto a frying pan and set the heat to medium. Once it starts to simmer add your tofu pieces very carefully!
7) Let each side fry for about 6-10 minutes. This is the part where you will have to pay attention to how fast your stove heats the nuggets. ( I keep it on the frying pan for about 5 minutes before I take a peak to see how much it fried on the one side. Flip the tofu slice over once the one side is golden (not burned). Repeat the step to the other side of the tofu.
8) Once the tofu slices are golden, place them on a baking sheet and bake for 20 minutes. Flip each slice halfway through.
9) Take out the nuggets and I hope you enjoy them!
I like adding pieces of green onions to top it off. I think it works perfect especially when you dip these nuggets into ketchup!
