I made this sweet butternut squash soup. It was one of my favourite vegan soups and it had satisfied my craving! I recommend this soup to those of you who are looking for a soup recipe to make and try out!
Prep Time: 5 min Cook Time: 30-40 min
Ingredients:
- 1 butternut squash (3-4 pounds)
- 4 cloves garlic
- 1 white onion
- 1 carrot
- 1 FuGi apple
- 1/2 cup coconut milk
- 2 cups vegetable broth
- pinch of black pepper, cinnamon, nutmeg & salt
Instructions:
1) Cut your butternut squash, carrot and apple into small pieces. Mince the garlic and place it in the pot with the vegetable broth.
2) Add the pepper, cinnamon, nutmeg and salt into the mixture and allow it to steam for about 5 minutes (close the pot slightly). Give the mixture a slight stir and close the pan slightly.
3) Once the mixture starts to steam, close your pot and let it cook for about 20-30 min (or until the squash can be poked through easily with a fork).
Remember to stir the mixture every 5 minutes.*
