I've been obsessed with the Biscoff Lotus cookies and banana bread. What better way to have them both in one serving right? I figured I would add the Biscoff Lotus cookies into the regular banana bread recipe I use to make my banana bread. It turned out amazing and I thought I would share the recipe with you guys!
Oven Time: 60 min Prep Time: 5 min Serves: 1 Loaf
Banana Bread Ingredients:
- 2 cups flour
- 1 TSP Baking Soda
- 1TSP Baking Powder
- 1/2 TSP Salt
- 1/4 TSP Cinnamon Powder
- 1/8 TSP Nutmeg Powder
- 1/2 cup Brown Sugar
- 4 Ripe Bananas
- 1/4 cup Olive Oil
- 1/2 cup + 4 TBSP plant based milk (I used oat milk because the banana bread becomes fluffy!)
- 1 TSP Vanilla Extract
- 1 1/2 Cups Bisoff Crumbles ( Mash the cookies into 1/2 inch crumbles)
Banana Bread Topping:
- 1 1/2 TSP Cinnamon Powder
- 1 cup Biscoff Crumbles (Break the cookies into 1/2 inch pieces
- 1 TSP Granulated Sugar
- 1 TSP Flour
- 1/2 - 1 TSP Olive Oil
The proportions of the ingredients listed above for the toppings were based off of me eyeballing what would had worked. It turned out great but adjust the measurements if needed!
Instructions:
1) Combine all of the banana bread dry ingredients into one bowl (flour, baking soda, baking powder, salt, cinnamon powder, nutmeg powder and 1/2 cup brown sugar. Mix the ingredients well.
2) Grab another bowl and mix your wet ingredients into it ( 4 ripe bananas, 1/4 cup olive oil, 1/2 cup + 4 TBSP plant based milk, 1 TSP Vanilla Extract.
3) Combine the wet ingredients into the bowl with the dry ingredients. Mix the ingredients until the batter becomes smooth and then add the 1 1/2 Biscoff Crumbles into the bowl.
4) Place a baking sheet into the banana bread loaf tray and pour the banana bread batter into the tray. Remember to fill 3/4 of the tray with the batter and allow some room for the banana bread to rise.
5) Mix the ingredients for the topping ( cinnamon powder, biscoff crumbles, granulated sugar, flour and olive oil into another bowl. Mix the ingredients well while coating the crumbles!
6) Add the crumbles onto of the banana bread.
7) Put the banana bread into the oven at 325 degrees for 60 minutes.
( Check regularly to see if the banana bread is not being burned. 50 minutes through the cook time, insert a toothpick in the middle of the banana bread. This is to see if the toothpick comes out clean and if it does, then turn the oven off and take out the banana bread to cool for few minutes.
Tip: Put your bananas into a brown paper bag for a few days so that it ripens faster!
